Barbacoa beef tacos
If you haven't watched Tacos on Netflix yet, you have to see it! Fair warning though, if you're anything like me, you'll then live, breathe and dream tacos. So I made some! Barbacoa beef tacos with meat simmered for hours with tons of good spices. Spicy but delicious!
I would recommend not to leave the chipotle chilies out, it gives all the flavor to the sauce. It's a pain to find where I live so I linked the online shop I buy them from below. But it's so good, I promise, you won't regret it!
Barbacoa beef tacos (18 tacos) :
- 650g stew beef
- 1 onion
- 3 garlic cloves
- 1 tbsp ground cumin
- 1 tbsp oregano
- 1/2 liter water
- 2 chipotle chilies in adobo sauce
- 1 big lime
- 2 tbsp cider vinegar
- 3 cloves
- 3 bay leaves
- 2 tbsp vegetable oil
- Salt and pepper
Heat oil in a pot. Brown the meat on all sides for a few minutes and then take it out of the pot.
Mince garlic, onion and chilies.
In the pot, add onion, garlic, cumin and oregano. Stir fry for a few minutes (3-4). Put the meat back in the pot.
Add water, lime juice, apple cider vinegar, chilies, cloves and bay leaves. Season with salt and pepper.
Mix well then cover with a lid.
Let it simmer gently for 4 hours, until the meat is super tender. Add water as you go if needed. Sauce must thick but you still want sauce.
Take the meat out, pull it and put it back in the sauce.
Serve with tortillas with onions and cilantro.
