Provence style beef stew

A slow cooked dish that is low maintenance, you know me, I love this. You can do whatever else you have to do while it cooks, it's perfect. A boneless beef shank in a rich, thick tomato sauce with a few olives, herbs and pearl onions (because they're fun but feel free to use yellow onion if you can't find any).

A comforting dinner that please everybody and that freezes well so you can enjoy it later too!

Provence style beef stew (serves 5-6) :

  • 1 boneless beef shank (1kg)
  • 3 carrots
  • 10 pearl onions (or one large yellow onion)
  • 3 garlic cloves
  • 1 diced tomato can (400g)
  • 2 tsp tomato paste
  • 2 bay leaves
  • 3 thyme sprigs
  • 20 olives
  • 50cl water
  • Butter
  • Salt and pepper

In a pressure cooker, add a knob of butter and brown the meat on medium-high heat on each sides. Take it out of the pot and set aside.

Peel the onions, garlic and carrots.

Chop the carrots in large chunks, mince the garlic.

Add a bit more butter to the pot if needed. Add onion, garlic and carrots and cook for a few minutes, stirring. Season with salt and pepper.

Add the tomato pasta, bay leaves, thyme and diced tomatoes.

Add water, stir well.

Close the pressure cooker and let it cook for 1h30-2h.

Meanwhile, boil the olives for 5 minutes to make them less salty.

Open the pressure cooker, add olives and let it simmer 20 minutes to reduce the sauce.

Serve with steamed potatoes or rice!
