Braised chicken with wild mushrooms

Fall's stars : wild mushrooms! Short season but oh so good. I braised chicken in the mushrooms juice, it was peak fall flavors and so delicious.

I used a ready-made wild mushroom mix with lots of different types of mushrooms but use what you got on hand it's fine! Serve it on a fluffy bed of basmati rice, pure bliss, no kidding. I added even more parsley on my plate because I love ittt.

Braised chicken with wild mushrooms (serves 6) :

  • 6 chicken thighs
  • 600-800g wild mushrooms
  • 1 onion
  • 2 garlic cloves
  • 3 tbsp fresh parsley
  • 2 tbsp vegetable oil
  • Salt and pepper

In a deep pan, heat the oil for a few minutes.

Add seasoned chicken skin side down and let it crisp up for 5-6 minutes. Skin must be golden brown and crispy. Flip them over and let it cook an additional 3 minutes.

Wash and chop the mushrooms. Mince the onion and grate the garlic.

Take the chicken out of the pan and set it aside in a plate.

Add onion and garlic to the pan, fry for 30 seconds while stirring. Season with salt and pepper.

Add mushrooms and chicken back to the pan. Let it cook uncovered for about 10 minutes. Add the parsley.

Serve over rice!
