Lentils & sausages Fall stew

I love stews soooo much, heartwarming, cozy and delicious every single time. Rhis one is a stew with lentils and sausages, kinda classic, with carrots, kale, lots of garlic and parsley. With a bowl of fluffy rice it's the best.

So versatile, you can throw pretty much anything in there and it would be good! You could also leave the sausages out and it's a delicious vegan meal. I like making a big pot of stew so we have some for several days or I even freeze some for later.

Lentils & sausages Fall stew (serves 4) :

  • 4 sausages
  • 2 carrots
  • 1 onion
  • 1 kale stalk
  • 3 garlic cloves
  • 200g uncooked lentils
  • 1 liter veggie stock
  • 3 tbsp fresh parsley
  • Vegetable oil
  • Salt and pepper

Rinse the lentils under cool water.

Mince onion, garlic and slice the sausages.

In a pot, add a few tbsp of oil and fry the sausages, onions and garlic for a little bit.

Peel and slice the carrots. Wash the kale, keep the leaves but discar the stems.

Add carrots, kale, lentils and veggie stock to the pot.

Cover and let it simmer for about 30 minutes.

Lentils must be tender.

Add fresh parsley and serve!
