Simplest pumpkin soup ever (5 ingredients)

Pumpkin is a staple winter ingredient. Roasted, on salad, in soups, in baked dishes... 1001 ways to use it. Here's a very quick and easy one. A soup with only 5 ingredients that is tasty and creamy. I didn't count salt, pepper and water as ingredients, so I cheated a little bit I guess. See down below for some ideas to make it fancier!
This recipe below is really a simple one, a basic one. So how do we take it up a notch? A few ideas :
- Add allll the toppings : fresh goat cheese, pumpkin seeds, olive oil, fresh parsley
- Add other veggies : carrots or sweet potatoes for examples
- Use stock instead of water, it's more flavorful
Simplest pumpkin soup ever (serves 2-3) :
- 500g pumpkin
- 1 onion
- 1 potatoes
- 2 garlic cloves
- 1 tbsp sour cream
- 0,5cl water
- Salt and pepper
Peel and chop the pumpkin and potatoes in cubes.
Mince garlic and onion.
Add all the ingredients except sour cream in a pot. Season with salt and pepper.
Simmer on medium for 20 minutes with a lid on.
Blend until smooth with an immersion or regular blender.
Add sour cream, stir.
Serve!
