Chickpea flour chocolate cakes (gluten free)

Very very chocolatey, oozing in the middle chocolate cakes made with chickpea flour because I have a lot to use up! You can't taste the chickpea flour really once they're cooked, it gives them a nice texture though. It's delicious, quick to make, perfect for a last minute snack.

And they're gluten free ! Chickpea flour is a great alternative here because it thickens the batter really well without giving it a chickpea flavour.

Chickpea flour chocolate cakes (serves 6) :

  • 3 eggs
  • 40g chickpea flour
  • 50g sugar
  • 50g salted butter
  • 200g dark chocolate
  • Chocolate chips

Preheat the oven at 180°C/350°F.

Melt the butter and chocolate in the microwave or in a pan. Let it cool a bit.  

Add eggs and sugar to a bowl, whisk until frothy.

Add the chocolate-butter mix, a little at a time, mixing thoroughly to avoid cooking the eggs.

Add the flour and fold it in with a spatula.

Grease the muffins tins and fill them up to 3/4. They won't rise a lot.

Add a few chocolate chips on top of each cake.

Bake for 8 minutes for a gooey center.
