Creamy butternut squash mash

Simplicity at its best. Roasted butternut squash with just a little bit of oil, salt and pepper. It gives you this intensely delicious and super creamy (without cream being added!) mash, so pleasing. Perfect to serve with red meat and potatoes.
You can also have fun with this recipe and add spices but honestly... it's so good like that! It doesn't even need spices.
Creamy butternut squash mash (serves 2-3) :
- 1/2 butternut squash
- 1 garlic clove
- Olive oil
- Salt and pepper
Preheat the oven at 180°C/350°F.
Use a knife to square the squash flesh.
Grate garlic clove and spread it on the butternut.
Season with salt and pepper, drizzle with a generous amount of olive oil.
Bake for 40-45 minutes at 180°C/350°F. Squash must be fork tender.
Scoop the flesh with a spoon into a blender.
Blend until smooth.
Serve!
