Roasted asparagus with feta, lemon and pistachio

Asparagus are back and what a delight! A very Springy version with feta cheese, lemon and pistachios. The asparagus are soft, the feta and lemon bring the right amount of tanginess and pistachios add a nice crunch. Pretty good if you ask me!  

Delicious served with all your grilled meats or even eaten as a main if you make a lot more of this!

Roasted asparagus with feta, lemon and pistachio (serves 2) :

  • 8 green asparagus
  • 1/2 block of feta
  • 1/2 lemon (+ zest)
  • 1 handful pistachios
  • 1 tbsp fresh parsley
  • Olive oil
  • Salt and pepper

Preheat the oven at 180°C/350°F.

Cut the bottom of the asparagus. Rinse them under cold water.

Cover a pan with parchment paper. Add asparagus and drizzle with olive oil, season with salt and pepper.

Roast the asparagus for 15 minutes in the oven.

Meanwhile, crumble the feta cheese into a bowl, add the juice of half a lemon, chopped parsley, ground black pepper and a little bit of lemon zest. Mix carefully with a spoon.

Chop the pistachios, keep some big chunks.

Take the asparagus out of the oven and put them on a plate. Add the feta on top, sprinkle with pistachios.

Drizzle with olive oil and serve!
