Tuna and artichoke salad, caper dressing with Campisi
A nice refreshing salad with incredible products coming directy from Sicily. This salad has it all : acidity, sweetness, fat. It's so good and so satisfying to eat.
When Campisi reached out and asked me to create a recipe with their products, I couldn't say no. They have a huge variety of sea products in glass jars, veggies, pesto... I also received a tuna and pistachio pesto that I can't wait to toss into warm spaghetti and a side of creamy burrata.
Tuna and artichoke salad, caper dressing (serves 2) :
- 1/2 rougette lettuce
- 10 cherry tomatoes
- 1/2 jar of Campisi tuna in olive oil
- 4 Campi artichokes in olive oil
For the sauce :
- 15-20 Campisi capers in salt
- 3 tbsp olive oil from the tuna jar
- 1 tbsp cider vinegar
- 1/4 tsp mustard
- 3 fresh basil leaves
Start by making the sauce so it can infuse while we prep the rest.
Whisk together the olive oil, vinegar and mustard for a few seconds.
Add the capers, a crack of pepper and chopped parsley. Let it sit.
Wash the tomatoes and lettuce.
Add a bed of lettuce in a serving bowl, add the tomatoes chopped in half, garnish with artichokes and tuna pieces.
Add the dressing on top of the salad and serve!
