Kimchijeon, korean kimchi pancakes

Let's take a quick trip to Korea with these delicious Kimchijeon or kimchi pancakes! Nothing to do with your usual Sunday pancakes, they're more like a crepe with a strong kimchi flavored, perfectly spicy and easy to make.

It cooks super quickly which makes it a perfect snack or lunch if you serve it with rice and veggies!

Kimchijeon (makes 6) :

  • 150g nappa cabbage kimchi
  • 120g (1 cup) flour
  • 30g (1/4 cup) cornstarch
  • 1/4 onion
  • 2 spring onions
  • 2 tbsp kimchi juice
  • 240ml (1 cup) cold water
  • 1 egg
  • Salt and pepper
  • Vegetable oil

Dice the onion and kimchi.

Chop the spring onions.

In a bowl, mix flour, cornstarch, kimchi juice, egg, spring onions and cold water. Mix until you have a smooth batter. Season with salt and pepper.

Add the chopped kimchi and onion to the batter.

Laddle into a hot pan with vegetable oil. Fry for 2-3 minutes on each side.

Serve!
