Parmesan crusted salmon
This is such a simple meal but it's delicious. The salmon is flaky, glossy inside and the breadcrumb gets crispy, with freshness from the lemon zest. I love it! It's ready in 15-20 minutes start to finish, you can cook the asparagus at the same time too.
I put the asparagus in about 10 minutes before the salmon so they're well roasted and tender. I also like serving this with potatoes or even rice. It goes well with so many things. Lots of room for creativity too! Add herbs or spices to the breadcrumbs.
Parmesan crusted salmon (serves 2) :
- 2 individual salmon fillets (or 1 big)
- 40g (1/3 cup) breadcrumbs
- 30g (1/3 cup) grated parmesan
- 2 chives
- 40g (3 tbsp) melted butter
- Zest of half a lemon
- Salt and pepper
- Olive oil
Preheat the oven at 200°C/390°F.
On a parchment paper covered baking sheet, put the salmon fillets and a touch of olive oil. Rub them in olive oil on all the sides. Put them skin side down.
In a bowl, mix the breadcrumbs, parmesan, finely chopped chives, melted butter and lemon zest. Add salt, pepper and mix well.
Press the breadcrumb mixture onto the salmon.
Bake for 10-12 minutes, the salmon will be flaky and glossy.
Serve with roasted asparagus.
