Seared salmon in creamy parmesan and dill sauce

I know some of you think cheese must never be paired with fish... But I love it, I think it's delicious so I'm doing it anyway. For example I made this delicious parmesan crusted salmon last month, it was incredible. Now here is a salmon with parmesan too but in a creamy sauce, with lots of garlic, bit tangy and overall delicious.

You could replace dill with basil or even parsley but it's so good with dill! Try if you have it on hands. I made simple roasted potatoes and arugula to serve with it.

Seared salmon in creamy parmesan and dill sauce (serves 2) :

  • 2 salmon fillets
  • 20cl (1 cup) full fat sour cream
  • 30g (1/3 cup) grated parmesan
  • Zest and juice of a lemon
  • 2 garlic cloves
  • 2 tbsp fresh dill
  • Salt and pepper
  • Olive oil

Season the salmon on both sides with salt and pepper.

Heat a pan with a little bit of olive oil and sear the salmon for 6 minutes on the skin side and 2 minutes on the flesh side. Set it aside.

In a bowl, stir all the other ingredients together (sour cream, parmesan, lemon zest and juice, grated garlic, chopped dill), season with salt and pepper.

Add the creamy sauce to the same pan you used to sear the salmon, heat on medium.

Once it starts boiling, turn the heat down to low.  

Put the salmon back in the pan for a minute to reheat them and serve immediately with roasted potatoes and greens.
