Spicy tuna rice bowl

A full meal ready in less than 5 minutes, what's not to like ? A spicy tuna rice bowl with cucumber, radishes and a lot of sesame seeds. Perfect when you're in need of a filling meal but don't have much time to cook.

I use my rice cooker to cook my rice, it gets so fluffy and delicious. If you don't own one, put one volume of rice for 2 volumes of water and cover it. Let it cook on low heat and take the lid off when it starts boiling. Let the water evaporates completely : it's ready.

For the tuna, I make a spicy sriracha mayonnaise with a little bit of rice vinegar. If you like it spicier, add some chili flakes or even more sriracha.

For the veggies, use whatever you have on hands or whatever is in season. I like to add a few crunchy veggies for texture : radish, carrot, cucumber... You can also add some avocado for creaminess.

This dish can be enjoyed over warm rice or as a salad on cold rice.

Spicy tuna rice bowl (serves 3-4) :

  • 260 g canned tuna
  • 10 radishes
  • 1/2 cucumber
  • 2 tsp sesame seeds
  • 250 g uncooked rice
  • Chili flakes
  • Chives

For the sauce :

  • 4 tbsp mayonnaise
  • 2 to 3 tbsp Sriracha
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Salt and pepper

Cook the rice in the rice cooker (or in a pot) by putting 2 volumes of water to 1 volume of rice.

Mix the ingredients for the sauce in a bowl.

Drain the canned tuna. Put the tuna in the bowl with the sauce and mix it well. Set aside in the fridge.

Slice the radishes and cut the cucumber in small pieces.

Chop the chives.

In a bowl, add a bed of rice (warm or cold).

Add a few tablespoons of spicy tuna, add some radishes, cucumber, sesame seeds and a few chili flakes. Add chives.

Serve !
