Pumpkin and maple syrup porridge

This is one of my favorite breakfast when Fall kicks in... A simple porridge ! This one is made with pumpkin and maple syrup, it's so so good. Porridge is such a perfect breakfast, it takes about 10 minutes to cook but it's heart warming and filling. A very nice way to start your day. I also have a peanut butter version on the blog.
Toppings are pretty limitless here, you just do what you want with it... I used : cacao nibs for some crunch and bitterness, some pumpkin seeds, fresh banana, a piece of dark chocolate (to mix into the porridge before digging in, trust me).
Pumpkin and maple syrup porridge (serves 1) :
- 25g (1/4 cup) oats
- 125ml (1/2 cup) milk
- 2 tbsp pumpkin purée
- 1 tbsp maple syrup
- 1/2 tsp cinnamon

In a small sauce pan, add all the ingredient and heat on low for about 10 minutes or until the mixture thickens.
Pour into a bowl and add your favorite toppings (here : cacao nibs, pumpkin seeds, banana, dark chocolate, maple syrup).
