Redcurrant and white chocolate cookies
It's been a while since I've shared a cookie recipe on here, let's make up for it today ! These are gigantic redcurrant and white chocolate chips cookies. The very sour redcurrant is perfect to balance the sweetness of these cookies.
What makes a world different in this cookie recipe is that there is no rest time for the dough, it isn't necessary here. It's a quick cookie recipe, it bakes for 10 minutes, not too bad I'd say. Please send me pics if you're making these !
Redcurrant and white chocolate cookies (8 large cookies) :
- 200g flour
- 115g softened butter
- 75g brown sugar
- 75g white sugar
- 1 egg
- 60g redcurrant
- 90g white chocolate chips
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla extract
Preheat the oven at 180°C/350°F.
In a big bowl, cream together the butter and two types of sugars. Whisk for 2-3 minutes until you reach a creamy thick consistency.
Add the egg and vanilla extract an whisk for a minute.
In a small bowl, combine flour, baking soda and salt.
Add the flour mix to the big bowl and incorporate it with a spatula.
When the flour is almost completely incorporated, add redcurrants and white chocolate chips.
Fold the chocolate chips and redcurrant in delicately.
Divide the dough into 8 large balls, don't flatten it.
Put the cookies on a baking sheet covered with parchment paper.
Bake for 10 minutes, edges must be golden but the inside must look underbaked.
Let the cookies cool on the baking sheet.
