Grilled skirt steak with chimichurri sauce

Simplicity is key these days because my weeks are very busy but I still want to eat good comforting food. Here I simply grilled a skirt steak, medium rare, topped with a nice chimichurri sauce (lots of herbs, oil and chili).
I served it with sautéed potatoes and a simple salad because that's all I managed to do that day. It would be so so good with oven roasted vegetables... Definitely gonna try that !
Grilled skirt steak with chimichurri sauce (serves 2) :
- 2 small skirt steak (or 1 large)
- 1/2 bunch of fresh parsley
- 1 tbsp fresh oregano
- 4 garlic cloves
- 60ml red wine vinegar
- 125ml olive oil
- 1/2 tsp salt
- 1/4 tsp chili flakes
- Black pepper
- Butter
- Olive oil
In a food processor, add the oil, vinegar, herbs, garlic, salt, pepper and chili flakes. Blend until finely chopped, don't blend too much.
Heat a pan with a little butter and a little olive oil.
Season the meat with salt and pepper on both sides.
Grill the skirt steak for 2 minutes on each side. Let it rest for 5 minutes before slicing it thinly.
Serve drizzled with chimichurri sauce on top.
