Gamjaguk, beef and potatoes Korean soup
Gamjaguk is a Korean soup, light broth, minced beef and potatoes. You can add noodles or tofu to it, I stuck to tofu because it's already quite filling with the potatoes.
No punchy flavors here, it's a light broth soup. But it's so good and makes for a great light dinner but hearty dinner.
Tofu really brings a great texture here, I would recommend to add it ! I use an organic firm tofu so it holds its shape better during the cooking.
It's not a secret for anyone that I absolutely love Korean food. I've been testing a lot of recipes lately and discovering new flavors is always a great joy to me ! I'll try to share the best recipes I've tried here.

If you have gochugaru on hands and like it a little bit spicy, you can sprinkle some on your bowl before serving.
Gamjaguk, beef and potatoes Korean soup (serves 4) :
- 150g stew beef
- 200g firm tofu
- 1 tbsp soy sauce
- 3 large potatoes
- 2 garlic cloves
- 2 spring onions
- Vegetable oil
- Salt and pepper
Mince the beef very thinly.
Mince the garlic and white part of the green onions.
Mix together the beef, garlic and soy sauce in a bowl. Let it rest while you prep the rest of the ingredients.
Peel the potatoes and slice them.
Slice the tofu in 2cm thick slices. Chop the green onions in 2cm thick slices.
Drizzle a little bit of vegetable oil in a pot, brown the beef and its marinade until golden brown.
Add 1,5 liter of water and bring to a boil. Skim up the foam.
Cover and let it cook for 10 minutes.
Add the potatoes, tofu. Season with salt and pepper. Let it cook for 10 minutes, until the potatoes are tender.
Add the green parts of the green onions, turn off the heat.
Serve warm.
