Pulled duck and Brillat Savarin burger

A delicious slow cooked pulled duck homemade burger with some exquisite melted Brillat Savarin (an incredible French cheese), it's just so good. If you organize your day properly, it's quick to make because the duck slow cooks for 2 hours on its own and the assembly of the burger takes about 2 minutes.

Homemade burgers are so great, you can put whatever you want in them, it's served warm and you can add a lot (I mean, a looot) of cheese.

I have a couple other burger recipes on the blog, this banh-mi version is delicious but also this bagel burger !

Pulled duck and Brillat Savarin burger (serves 4) :

For the pulled duck :

  • 2 duck legs
  • 500ml vegetable broth
  • 1 onion (quartered)
  • 1 garlic clove
  • 2 bay leaves
  • Salt and pepper

For the burgers :

  • 2 handful arugula
  • 4 brioche buns
  • 1/4 red cabbage
  • 4 slices Brillat Savarin

Put the duck legs and all the other pulled duck ingredients in a slow cooker for 4 hours on high or in a pressure cooker for 2 hours.

Mince the cabbage very thinly.

When the duck is cooked, take the legs out of the pot and shred them using two forks, the meat should be really tender.

Melt the Brillat Savarin slices one by one in a non-stick pan.

To assemble the burger : open the brioche bun, add some cabbage, some pulled duck, pour the cheese and add some arugula. Close with the second bun.

Serve !
