Beet and feta dip

Here's to colorful Spring recipes ! A minty feta and beet dip to serve with your favorite veggie platters, chips or crackers.
I love dips as appetizers, they're fun, delicious and not very time-consuming. In this one, the beet really sweetens the sharp tasting feta cheese. Mint adds some freshness, love it here.
As usual, since we're eating it raw, it's best to use a good quality olive oil. I love Carapelli olive oil, I use it on a daily basis in pretty much everything.

Beet and feta dip (1 bowl) :
- 200 g feta
- 200 g cooked beets
- 1 garlic clove
- 1 tbsp lemon juice
- 2 tbsp olive oil (+ more for garnish)
- 20 fresh mint leaves
- Salt and pepper
In a food processor, add all the ingredients and blend until you reach a smooth consistency.
Let it sit in the fridge for 30 minutes before servir.
Enjoy with your favorite chips or crackers !
