Cheesy corn fritters

You can make these fritters with either fresh or canned corn, it is an easy and delicious recipe. I think this is going to be a staple for our picnic this Spring and Summer, it can be eaten warm or at room temperature. I also made a sweet pea version many moons ago.
Cheesy corn fritters (6 pieces)
- 300g (2 cups) corn
- 90g flour
- 1 tsp baking powder
- 2 eggs
- 45ml milk
- 90g grated cheese
- Salt and pepper
Mix all the ingredients in a bowl with a spatula so you don’t crush the corn.
Heat a pan with a little bit of grease (I used canola oil).
Put a big spoon of batter in the pan and shape it to form a patty.
Let it cook 3 minutes on each side.
Eat warm or at room temperature with a squeeze of lime and a drizzle of sour cream!
