Bacon deviled eggs

Picnic season is in full swing so why not have fun with bacon deviled eggs? A very easy and simple starter that will please a crowd!

Get your whoa factor up the roof with a fancy piping job and a little garnish of bacon and fresh chives. Boom, a work of art – words from my daughter.

Bacon deviled eggs :

  • 6 eggs
  • 3 slices of bacon
  • 2 tbsp mayonnaise
  • 2 tsp mustard
  • 1 tsp lemon juice
  • 1/2 minced garlic clove
  • 1 tsp chives
  • Salt and pepper

With a sewing needle, poke a hole in each egg. Go slow so it won’t burst open. It allows air bubbles to escape and you get eggs that peel right off.

If you have a steamer, steam the eggs inside for 13 minutes.

If you don’t : add a little bit of water in a pot and add a steaming basket inside. When the water starts to simmer, add your eggs to the basket and cook for 13 minutes.

Transfer to an ice bath for 3 minutes.

Peel the eggs and slice lengthwise.

Spoon out the yolks in a bowl and set the whites aside.

In the bowl, add the rest of the ingredients (but not the chives) and mix until smooth.

Stuff your eggs with a spoon or a piping bag for a fancy version.

Fry the bacon and break into small pieces.

Garnish the eggs with a few bits of bacon and chopped chives.
