Creamy potato soup with bacon bits

Soups season is here and I couldn't be more excited! It got chillier so I think it's ok to get back to soup, right? Here's the recipe for a deliciously creamy potato soup with bacon bits and a (not so) healthy dose of sour cream. So so good...

I made a whole cookbook about soups because I am so passionate about the topic! I know, weird obsession to have but I love soups, what can I say? It's in the shop on the blog if you're curious.  

Creamy potato soup with bacon bits (serves 4) :

  • 1kg potatoes
  • 1 onion
  • 3 garlic cloves
  • 75cl veggie stock
  • 200ml milk
  • 4 tbsp sour cream
  • 100g bacon bits
  • Chives and parsley
  • Salt and pepper

Peel potatoes, garlic and onion.

Chop everything and put it into a big pot.  

Add veggie stock and let it cook on medium heat for 20-30 minutes until the potatoes are tender.

Blend the soup with an immersion blender. Add milk, sour cream. Season to taste. Blend some more.

Fry the bacon bits in a pan.

Serve the soup in bowls, add bacon bits on top, parsley, chives.
