Gravlax salmon avocado toast
This recipe can be enjoyed as breakfast or lunch, it's light but filling and nourishing. Avocado toasts with the famous gravlax salmon I shared last week.
The radishes bring a nice crunch, I leave a few chunks in the avocado mash for some texture, the cilantro is so refreshing and the salmon is glossy, salty and so so good. A dreamy lunch!
I'd suggest to not over salt the avocado mash because the salmon is already quite salty. Be reasonnable! Too much salt isn't doing this dish (or yourself) any good. Je
You could also use smoked salmon if you can't (or don't want to) make your own gravlax salmon but I'd recommend trying it because it's satisfying and OH so good. The texture is out of this world.
Gravlax salmon avocado toast (serves 2) :
- 4 slices of sourdough bread
- 2 avocados
- 16 thin slices of gravlax salmon
- 6 radishes
- 1 lemon
- 2 tbsp fresh cilantro
- Salt and pepper
Mash the avocado in a bowl with salt, pepper and half of the lemon juice
Toast the sourdough slices in a toaster.
Slice the radishes thinly. Chop the cilantro.
Spread a generous layer of avocado on your toasts.
Add radishes, salmon and cilantro.
Serve and enjoy!
