Creamy lemony pasta and grilled sardines

Here's an easy and quick recipe to make, creamy, slightly lemony linguine pasta served with deliciously crispy sardines, pan fried in olive oil.

It almost smells like Spring in the kitchen with those grilled sardines. And these creamy linguine are a perfect side to it !

The slightly annoying part in this is the sardines bones because there's a loooot. Even though these were fillets. That's how it is with fish ! But it's so worth it, it's delicious.

Creamy lemony pasta and grilled sardines (serves 4) :

  • 12 sardines fillets
  • 400 g linguine (uncooked)
  • 3 garlic cloves
  • 15 cl sour cream
  • 1 onion
  • 1/2 lemon
  • 2 tbsp chopped fresh parsley
  • Olive oil
  • Salt and pepper

Cook the pasta according to the package instruction for an al dente pasta. Keep a cup of the pasta cooking liquid for later. Drain and set aside.

Season the sardines with salt and pepper.

In a pan, add a generous drizzle of olive oil. Fry the sardines for 3 to 4 minutes on each side, they must be golden and crispy. Set the sardines aside but don't rinse the pan.

Mince the onion and grate the garlic.

Add them to the pan and stir fry them until the onion is completely translucent.

Add the lemon juice, sour cream and pasta. Let it cook on low heat. Add a little bit of pasta cooking water if it's too thick.

Add the parsley, season with salt and pepper. Mix well.

Serve the linguine and put 3 sardines per person on top.
