Beef heart skewers
Beef heart in small pieces, marinated in good spices and grilled sound pretty good, right ? It's the recipe you're getting today anyway ! Spiced beef heart skewers, delicious served with roasted potatoes for example.
Why use beef heart instead of other beef parts ? Because there's an economic crisis going on, duh. I'm not a big fan of organ/offal meat so my mission here is to make DELICIOUS recipes with organ/offal meat that will convince everyone.
The food shopping bill keeps getting higher and higher and there's a few easy things we can implement to lower eat. Organ/offal meat is often cheaper than other cuts of meat because most people won't buy them (I plead guilty). This time beef heart was 4,95€/kg, when other cuts of beef were 8€/kg (not offal meat obviously).
So let's try making delicious recipes with cheaper cuts, shall we ? It's also a good way to eat things we're not really used to buy or prepare.

Now let's talk about the flavor of these skewers because I guess that's what you want to know. Beef heart's taste isn't really strong, I thought it'd be much stronger. It's nothing like liver for example. It tastes just like other cuts of beef we're more used to eat, it's tender and juicy. It's so good. That was a good surprise. If you overcook it though it can be a little tough.
For the skewers, I used 15 cm wooden ones, the size is great to make plenty smaller skewers and it's easier to eat for kids.
Beef heart skewers (serves 2) :
- 300 g beef heart
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/4 tsp ground ginger
- 2 tbsp olive oil
Wash the beef heart under cold water and dry it in a clean towel.
Chop it into small cubes.
In a bowl, put olive oil, ginger, cumin, salt and pepper. Add the beef heart cubes and mix well.
Let it marinate for an hour.
Poke the beef heart cubes onto the wooden skewers.
Grill the skewers in a hot pan or on the grill, on high heat, about 3 minutes per side.
