Grilled corn with garlicky Sriracha mayo

One of my favorite thing to eat in the Summer is grilled corn ! Served with a spicy garlicky Sriracha mayo, it's gonna steal the show. It can either be a main or a side to your favorite grilled meat. It's a mess to eat but it's so good.

What is Sriracha sauce ? It's a spicy thaï sauce, depending on the brand you'll get it can be more or less spicy but it's still not a very fiery sauce, won't burn your mouth, just a nice tingle.

For grilling the corn, I'm using an electric grill from Tefal I've had for years, we're living in an apartment where charcoal BBQ aren't allowed. Electric works great, gives it a good charred taste but obviously won't be exactly the same as using a charcoal BBQ

You could use a good aïoli as the sauce too or any hot sauce you like mixed with mayo would work.

Grilled corn with garlicky Sriracha mayo (serves 4) :

  • 4 corn ears
  • Cilantro
  • 1/2 lemon
  • Butter

For the sauce :

  • 3 tbsp mayonnaise
  • 1 garlic clove
  • 1 tbsp Sriracha sauce
  • 1 drizzle of lemon juice
  • Salt

Press the garlic with a garlic press (or grate it with a microplane).

Prep the sauce by mixing together in a bowl the mayonnaise, sriracha, garlic, lemon juice and a pinch of salt. You can adjust the amount of hot sauce to your liking.

Slather the corn ears with softened butter.

Grill the corn ears for 15 to 20 minutes on the grill (electric or charcoal). Turn them regularly to grill them evenly on all sides.

Season the corn with salt, pepper and drizzle the sauce on top.

Sprinkle with chopped cilantro and serve.
