Brie, bacon and caramelized onion bagels

A good homemade bagel is so delicious, at least as good as your favorite bagel shop with an original recipe : brie, bacon and caramelized onions, with a bit of mustard and some spinach. It's a light but delicious lunch !

For the homemade bagel recipe, I posted one on the blog a while ago. It's the one I always use when making bagels. They're fluffy and not dry at all. You can play around with the toppings !

First time making bagels on my own here! Pretty proud of how it turned out, I am not really good with everything bread related but I nailed it this time. I used ChefNini recipe for those, I love her blog!

Bagels are a great alternative to sandwiches and burgers, it's fun to switch it up sometimes. I love a good pastrami bagel or a smoked salmon one... So I needed to add more bagel recipes to my blog so you can have fun with them too.

Finding balanced but quick to make and fun to eat lunches can be challenging... My daughter eats at home 3 school days out of four si we have to make it work and I like trying new things, I hope this can help inspire some of you.

If you make the bagel dough and caramelized onions the day before, you bake the bagels in the morning, it makes for an easy lunch but it's not practical for everyone. I work from home so I have the priviledge to cook a little bit in the morning before starting my day.

If this isn't possible for you, you can make the bagels and caramelized onions the day before. Once the bagels are completely cooled down, you can put them in an air tight container so they stay fluffy and do not dry out. If needed, toast them a little bit before assembling.

Last week I posted a recipe on how to make your own bagels. So here is a quick and delicious idea to stuff your fluffy bagels. It is a refreshing dinner and we all need that on our meal plan during this hot hot summer.

Brie, bacon and caramelized onion bagels (serves 4) :

  • 4 bagels
  • 8 brie slices
  • 8 smoked bacon slices
  • 2 handfuls baby spinach
  • 4 onions
  • Mustard (honey mustard is even better)
  • Butter
  • Salt and pepper

Peel and mince the onions finely.

Heat a pan with a big knob of butter, add the onions. Season with salt and pepper.

Cook them on low for 25 to 40 minutes, stirring occasionally. They must be dark brown and caramelized.

In a pan with no added fat, cook your smoked bacon until really crispy.

To assemble the bagel, spread mustard on the bottom piece of the bagel.

Add baby spinach, a big spoon of caramelized onions, brie and crispy bacon on top.

You can put it in the oven for a few minutes to melt the brie if you want to but that's completely optional.
