Sunday breakfast bowl

This is my dream breakfast right here but if we're being realistic for a minute, I have NO time to do that on week days. That's why I called it my sunday breakfast bowl. Dreamy, right? Scrambled eggs, spinach, mushrooms, a bit of avocado and roasted potatoes. Big win for me.

I know cooking large pieces of meat at home can be intimidating, you don't want to mess it up. Ribs are very forgiving, it's so tender, even if it's slighlty overcooked it still tastes delicious. Can we also talk about this marinade? So good. Thyme, parsley and garlic : can't go wrong with these!
