Asian inspired cucumber salad with sesame seeds

It is really hot in the city in the summer. So to change from my amazing cucumber in sour cream that I love, I made this asian inspired salad with a lot of good things and even a little chili to spice things up !

What do you like to cook when it gets really hot? I love a good fresh salad with grilled meat or roasted chicken (but turning the oven on is real hard those days!).

Asian inspired cucumber salad with sesame seeds (serves 2-3) :
- 1 cucumber
- 1 tbsp vegetable oil
- 2 tsp rice vinegar
- 3 tsp soy sauce
- 1 garlic clove
- Sesame seeds
- 1/2 fresh chili (optional)
Wash and slice the cucumber as thin as possible. Put it in a colander, add a tsp of salt. Massage the slices with salt using your hands until well combined.
Let it sit for 15 minutes.
Meanwhile, grate the garlic. Add in a bowl : garlic, oil, vinegar, soy sauce and about a tablespoon of sesame seeds. Add the sliced chili if using.
Drain the cucumber and press gently with your hands to get rid of excess water.
Add cucumber in a serving bowl, pour sauce over and mix well. Decorate with a few more sesame seeds.
Refrigerate until ready to serve.
