Scrambled silken tofu (vegan)

I know a lot of people are doing Veganuary in January, so it was a good time for me to share this delicious scrambled silken tofu recipe with you, it mimics the texture of scrambled eggs so well but it is vegan ! And... It's February. Haven't had time to share it sooner. Weeks go by so fast...!

Hiyayakko, wakame and ginger silken sofu

Here's a nice side dish (or light main) main idea, coming straight from Japan. Hiyayakko is silken tofu with toppings. Here I chose to put ginger, wakame seaweed and a little sauce to season it all. It only requires 5 ingredients, it's so quick and easy to make.

Jeera aloo, sauteed cumin potatoes

I love indian cuisine, options are endless and the recipe range is so so wide. Here I made jeera aloo which is boiled then pan fried potatoes with spices. Cumin, turmeric, a bit of chili and some fresh cilantro to refresh everything.

Çilbir is a turkish recipe of poached eggs on a bed of tangy savory yogurt with a spicy chili oil on top. It's yummy and so comforting. Plus, it's not very time consuming to make.
