What to eat in January ? 10 recipe ideas !

A lot of you take advantage of January to eat healthier, I'm definitely not team healthy all the time, but I do have a good amount of feel good recipes on the blog. So I made you a quick list of 10 recipes to make in January to eat more balanced meals but still delicious !

#1 - Breaded salmon with avocado spread and lemon jelly

This recipe is soooo good and looks great too. Salmon, creamy avocado and lemon jelly dices that will literally melt in your mouth. It's a recipe that requires a little bit of prep but it's a great one.

I recently took a cooking course at the Paul Bocuse institut that was based on... drum rolls... salmon. We realised this recipe in glasses but I thought it wasn’t really easy to eat so I made it a lunch with a few twists and turns.

#2 - Fall wheat salad with cranberries, cashews and kale

This salad is called "Fall salad" but it really is just as good in the Winter. It's everything I like about a salad, lots of textures and flavors and it's full of good stuff !

I know most of you don’t want to be eating only soups in fall and this salad is perfect to switch things up. All sorts of good stuff in there but basically : wheat, kale, cranberries, cashews and a healthy amount of goat cheese to brighten it all.

#3 - Pumpkin and button mushroom soup

Nothing like a good bowl of soup in the middle of Winter. This one is button mushroom and pumpkin soup and it's delicious.

I hope you’re not over soups yet because I surely am not. This week, I’m sharing with you this incredible pumpkin and button mushroom soup. It’s so soft and cozy, I can’t get over it.

#4 - Beef and spinach tortellini soup

Another soup recipe that I absolutely love, it's filling with tortellini, beef and spinach. A whole meal in one bowl, love it.

This recipe is as surprising as it’s easy. A beef and spinach tortellini soup, it makes for a delicious creamy and flavorful soup. It’s incredible, no other words come to my mind, it’s going to go in my monthly rotation for the Winter, no doubt.

#5 - Roasted potatoes and lentils Winter salad

I love potato salads ! I added lentils to this one to make it more nutritious and even more delicious.

If you’re tired of soups, here is an idea to satisfy your veggie craving. A big old bowl of roasted potatoes and lentils salad. Packed with proteins and very delightful. A good dressing, crispy seeds and crunchy potatoes : nothing better!

#6 - Rustic beef stew

My favorite way of sneaking veggies into my family's meal is stew. Veggies are tender and full of meaty flavors. So I add a lot of veggies to my stews and I love it.

Here I made a delicious beef stew with carrots, potatoes and leeks. The meat, cooked for a long time, is fork tender... And the veggies are added throughout the process to keep their textures but still be infused with the delicious taste of the sauce!

#7 - Barbacoa beef tacos

Tacos have to be on that list because it's honestly healthy ! I guess it depends on how many tacos you eat haha but it's balanced with veggies, proteins...etc. All good in my books !

If you haven’t watched Tacos on Netflix yet, you have to see it! Fair warning though, if you’re anything like me, you’ll then live, breathe and dream tacos. So I made some! Barbacoa beef tacos with meat simmered for hours with tons of good spices. Spicy but delicious!

#8 - Gochujang jjigae, Korean pork and vegetables stew

If you want to spice up your life, and feel like you're in Korea for a meal, I highly recommend you try making this stew called Gochujang jjigae.

Let’s make a gochujang jjigae today, I spotted this recipe on this blog. I have a big tub of gochujang (Korean fermented chili paste) at home and this was a delicious way to use it, it’s a pork and vegetable spicy stew basically.

#9 - Winter style guacamole

A recipe that is a crowd pleaser, a delicious guacamole with a little twitst.

When it’s cold in Europe, it’s hot in the countries we import our avocados from. Meaning avocados are perfectly delicious and ripe in winter. Even though, you might enjoy guacamole on a sunny beach in the middle of summer, you can also have great fun eating it while it’s freezing cold outside.

We're ending this list on a sweet sweet note with this Winter spiced hot chocolate !

What is your favorite comfort drink for winter? I always had a thing for a good hot chocolate! I made a dairy version but make it dairy free by adding almond milk and omit the sour cream. This hot chocolate is creamy and thick, so comforting and not too sweet.

I hope this list will be helpful for you and will help you plan out your meals through January. Don't forget to eat things you enjoy, eating balanced doesn't mean we need to have steamed veggies at all meals.
