A no bake dessert that is soooo light, perfect for the warmer season! Instead of dipping the lady fingers in coffee, I used raspberry juice! The key here is to not overdipped the lady fingers or they will get soggy and gross. I hate it.

This is inspired by a delicious Ottolenghi recipe in his Jerusalem book that I love. A very oriental recipe, not acquainted to fit our occidental tastebuds, with punchy flavors.

Those cookies are such a treat! Pecan nuts, chocolate and a dash of bourbon for soft and chewy cookies full of good flavors.

It's fudgy but not too sweet, it is easily removable from the pan (which is a problem I frequently encountered with gluten free cakes in the past, sticking to the pan and making a big mess) if you use parchment paper.

Because sometimes you don't want to wash 8 bowls, 12 spoons and 3 pans. There, I have something for you : blender pancakes. Put it all in a blender and blend, boom. Modern day miracle! A fluffy and very delicious pancake tower.
